Recipe: Vegan summer rolls

Lately, I’ve been trying out a whole bunch of new vegetarian and vegan recipes to bring more diversity to my menus. I came across a recipe for summer rolls, and I fell in love. Rice paper can be a little finicky, but once you get a hang of it, it’s awesome! You can do so many things and create so many different concoctions that taste great.
